ARCHIVED - Traditional 2,000-year-old technique for wine making stays alive in Murcia, the last of its kind in the world

Murcia is famous across Spain and the world for its wine production, and several municipalities in the north of the Region – including Jumilla, Bullas and Yecla – have Protected Designation of Origin (PDO) to guarantee the quality of their wines.Another thing that is marking out Murcia on the global wine stage is the use of an ancient technique that has nearly been forgotten by winemakers around the world… but Murcia wineries are keeping the flame burning.Bodegas Saura, located in the municipality of Caravaca de la Cruz, a town famous for its Wine Horses Fiesta and part of the PDO Bullas, is notable for it use of the traditional Roman way of fermenting wine – in large vats made of limestone.On a recent visit to the Bodegas Saura winery, Murcia’s Minister for Agriculture and the Environment, Antonio Luengo, stressed the need for excellence and competitiveness of Murcia wines through their high-quality and the differentiating nature of their production processes.Luengo praised “a winery that uses the fermentation process in limestone, which was already used by the Romans, and which is perhaps the only one in the world that does so nowadays.”He said that this unique feature of Bodegas Saura wines “is already giving its product an added value, which adds to the quality of its wines and the guarantee of being part of one of our three PDOs.”For more information about wine tastings, visits to Murcia’s famous bodegas and other wine tourism, see the following links:Image: CARM
